These amazing raw food soup recipes are delicious at any meal. Remember, always use fresh, organically grown and raw ingredients. To preserve the enzymes in your soups, never “cook” or heat them up past 118°F…which is still plenty hot!

Green Ginger Soup

2 cups tomatoes, or cucumber, or a mix of both
1 cup water
4 cups spinach
1 medium avocado
1 inch fresh ginger
1 tsp. sea salt
1 tsp. mellow miso
1 lemon, juice of
2 Tbs. apple cider vinegar
2 Tbs. olive oil

Blend all ingredients.

Thai Coconut Soup

2 cups coconut water
1 1/2 cups water
1 cup tomatoes
2 cups young coconut meat
1/2 avocado
1 medium garlic clove
1 inch fresh ginger
2 Tbs. mellow miso
1 Tbs. garlic-flavored flax seed oil, or olive oil
1/2 tsp. sea salt
2 Tbs. nama shoyu or Liquid Amino’s
2 limes or lemons, juice of
2 pinches cayenne pepper, to taste
1 cup cilantro, or parsley
1 cup tomatoes, diced
1/3 cup onions, chopped

Blend all ingredients except for the last three. Then add the cilantro or parsley, and blend briefly, so it’s not entirely liquefied. Pour in a bowl. Add last two ingredients and mix well. Add more cayenne pepper if you desire the soup spicier. Serves 4.

Extra Zinc Soup

1 cup cucumber
1 red bell pepper
1 cup arugula
1 cup parsley, or cilantro
1/2 medium avocado
1/2 cup pumpkin seeds, ground
1/2 medium apple
1 cup water
3/4 tsp. sea salt
2 tsp. nama shoyu or Liquid Amino’s sauce
2 Tbs. garlic-chile-flavored flax seed oil, or olive oil
(if using olive, then add a pinch of cayenne pepper
and 1 clove of fresh garlic)
spirulina flakes to taste (optional)

Blend all ingredients except spirulina flakes. Place in a bowl. If desired, add some spirulina flakes. Pumpkin seeds are one of the richest plant source of zinc, so this is why we called this soup extra zinc.

Ultimate Gazpacho

2 cups tomatoes
1 cup cucumber
1/4 cup olive oil
1/3 cup lemon juice
1/2 tsp. sea salt
1/2 to 1 tsp. jalapeno pepper, minced
1 medium garlic clove

Blend. Place in a bowl.

Add:
2 cups tomatoes, chopped
2/3 cup cucumber, chopped
1/2 cup red bell pepper, finely diced
1/4 cup onion, chopped
1/2 cup cilantro or parsley, chopped

All the vegetables should be chopped or diced very fine. Using a food processor works great for this. Mix the chopped vegetables with the ingredients that have been blended. Serve cold on a hot summer day, or any time! You can also garnish with summer flower petals. The Gazpacho is a traditional Spanish dish.
